Our vineyard is located on a common geological formation, Permian sandstone dating back to the Paleozoic era. Here we find two main types of soil: schist and sand.

We harvest at night to preserve the freshness of the grapes. Juice extraction by gravity and cold pre-fermentation settling preceded by light clarification. Then aged on lees.
